| 15 | oz | Chinese wood ear mushrooms (soaked in boiling water for 20 minutes) |
| 2 | t | arrowroot or cornflour |
| 1 | l | Vegetable Stock |
| 1 | Ginger (fresh, peeled, sliced, 5cm by 2inches piece) | |
| 2 | T | soy sauce |
| 2 | t | Sweet Sherry |
| 1 | t | Rice Vinegar |
| 4 | Bok Choi (small) |
