Cranberry White Chocolate Cookies

Ingredients
| 2 | large eggs | |
| 1 3⁄4 | c | brown sugar (packed) |
| 1⁄2 | c | cooking oil |
| 1 | t | vanilla |
| 1 3⁄4 | c | flour |
| 1 | t | baking powder |
| 1⁄2 | t | Baking soda |
| 1 | c | dried cranberries |
| 1 | c | white chocolate chips |
Instructions
1. Beat eggs and brown sugar in a large bowl until thick and pale. Add cooking oil and vanilla - beat until smooth.
2. Combine flour, baking powder and baking soda in a small bowl. Add to brown sugar mixture in 2 additions, mixing well after each addition until no dry flour remains.
3. Add cranberries and white chocolate chips. Mix well. Cover and chill for 1 hour.
4. Roll into ball using 1 tbsp of dough for each. Arrange about 2 inches apart on a greased cookie sheet. Bake at 375F for about 10 minutes until golden. Let stand for 5 minutes before removing to wire racks to cool.
